— Why mill my own flour? —

Would you rather your morning coffee come from freshly ground beans, or beans that were ground months ago? How about cooking with home grown spices versus ones that have sat on a shelf?


Fresh milled flour works the same way! When wheat is milled just before baking, the flour is at its freshest, most flavorful, and most nutritious. That is something most store bought breads simply cannot offer.


Once wheat is milled, it immediately begins to lose nutrients and natural oils through exposure to air. To extend shelf life, most commercial flours are heavily processed and later enriched with synthetic vitamins to replace what was lost. While this makes flour last longer, it is not the same as using it fresh.


At Dough-gen Delights, we mill our own flour fresh before every bake. This allows us to preserve the natural flavor, aroma, and nutrients of the grain, resulting in breads that are richer, more wholesome, and thoughtfully made from start to finish.
